  • In a Cantonese food restaurant or Hong Kong style Cha Chaan Teng, a chef will often ask a novice cook to make a dish of stir-fried flat rice noodle with sliced beef, as part of a cooking test. One reason is the rice flat noodle being so easy sticking onto the wok when stir-frying. It’s all down to the mastering of “wok hay”, literally meaning “the breath of wok”.

 

  •  The name of Rice Flat Noodle, pronounced as “ho2 fan2” in Cantonese, comes from Guangdong’s Sha-he town, the birthplace of the noodle.
